Slice of Heaven
Ingredients
- 2 cups plain flour
- ½ tsp baking soda
- generous pinch of salt
- ¾ cup of margarine
(or unsalted butter) at room temp
- 1 packed cup of brown
sugar
- 2 large eggs
- ½ cup of shredded
coconut
- splash of vanilla extract
- 250 grams of white chocolate
(in small pieces) - reserve a small handful for topping
- 1 cup of chopped pecan
nuts - reserve a small handful for topping
Method
- Preheat the oven to
160 degrees C. Grease, line (with silicon paper) then flour a slice tin
(9x13 inch)
- Using a wooden spoon,
beat margarine, sugar until combined, add eggs and combine, add coconut
and combine well, add vanilla and mix until smooth. Sift in flour, salt
and soda, throw in all (except for the reserved) chocolate and nuts and
mix to combine. It will be sticky but should end up fairly firm.
- Schloop the mixture
into the prepared tray, level out the top and sprinkle on the reserved pecans
and chocolate, pressing it slightly into the top.
Bake for 45 minutes, rotating the tin 180 degrees once to prevent burning on one side, until
the top is golden and the centre is set (timing will depend on the oven)
- Place tin on wire rack
and wait until it is just warm. Ease out of tin and slice into munchable-sized
bits. When cool, store (if it will last) in an airtight tin.
This slice is great with
tea/coffee and is guaranteed to contain no calories unless you
actually eat it
Notes
NOT Suitable for microwaving - will go yukky, will refuse to brown, and will
end up an un-palatible stodgy mess if you zap it. Let it cool completely before
you eat it - it's texture improves as it cools off.
NOT Kid Friendly
- this slice is much too nice to waste on the munchkins (they wont appreciate
it anyway) - lie to them, say it burned and you had to throw it all out - they
won't buy this story but it gets you off the hook psychologically when you end
up eating it all yourself.
